Blogmas Day 18: Double Chocolate Cookies

18 December 2013

If there's ever a time for cookies, it's Christmas. These particular cookies are a winner in my house all year round (heads up, my little brother says they're great with milk), but with the big day now a week away they make a great treat for Santa or yourself. They make a lovely gift too - I decided to wrap mine up in some clear cellophane, tied with red and green ribbon to keep it festive. This recipe originally featured in Eat Me by Cookie Girl (I switched up the Smarties for Minstrels). Enjoy...

The Ingredients:
  • 225 g/8 oz unsalted butter
  • 340 g/12 oz granulated sugar
  • 85 g/3 oz soft dark brown sugar
  • 1 tsp vanilla extract
  • 1 large egg & 1 yolk
  • 425 g/15 oz self-raising flour
  • 200 g/7 oz white chocolate
  • Minstrels/Smarties for decoration

The Method:
  •  Cream together the butter and sugars, followed by the vanilla and eggs. Add in the flour, mix until you have a soft dough.
  • Break the white chocolate in to chunks and push a few in to a small ball of the dough (this goes gooey when warm).
  • Place the cookie dough ball on to the baking sheet and add your second chocolate to the top.
  • Bake the cookies for 8-10 minutes at 190 degrees celsius.
  • Sample a few to check that they're all as delicious as the first!

  1. These look delicious! I'm definitely bookmarking this for later xxx

  2. They look so cute tied up with ribbon. I made some cookies the other day and they were delicious. Food gifts are the best.

  3. These cookies look really delicious. If it were up to me Santa would only have ONE cookie and the rest would be mines :)
    Thanks for sharing this recipe!
